Borscht is seemingly always associated with the Russian Empire, but this famous Beet soup was actually born in the Ukraine. From there, it made its way throughout Eastern Europe and on to the table of my Grandparents. Marlene was German, and Rudi (my grandfather) was East-Czechoslovakian (although the border was exchanged several times with Russia.) This is our adapted recipe in the Ukranian style and is about as hearty as it gets.
You can add a traditional dollop of Sour Cream, but it's optional. We include Dill as a garnish.
Beets, Beef Steak, Beef Stock/Broth, Potatoes, Carrots, Celery, Onion, Butter, Olive Oil, Red Wine Vinegar, Cabbage, Parsley, Salt, Pepper, Garlic, and imported Tomatoes.
