Northern Italian Minestrone

My Father was a Northern Italian, a part of Italy where the culinary concentration is on lighter fare, and they tend to avoid the heavier sauces and textures of Southern Italy. This soup has everything in it you would expect but rather than being a solid mass, it is more delicate and can even be served as an appetizer. This is My Grandmother Jane's recipe (My dad's mom) who was born and raised in Torino.

We provide the Macaroni which you add to the soup when it's hot and a Garnish of Grated Parmesan Cheese.

Elbow Macaroni, Chicken Stock/Broth, Cannellini Beans, Italian Tomatoes, Potatoes, Carrots, Celery, Onion, Butter, Leeks, Scallions, Garlic, Fresh Herbs, and five Italian Spices.
